Herbal cookies have gained significant attention Asfunctional food due to their potential health benefits beyond basic nutrition .These cookies are enriched with medicinal plant ingredient such as Turmeric, Mint, Wheat, Ginger ,Cinnamon ,Cardamon, Lemon, Honey , antioxidant, anti-inflammatory, immunomodulatory & Antimicrobial properties. Adding herbal drug are the plant is iron, zinc, fiber, Protein, etc. this review explores the formulation strategies commonly used herbs nutritional Composition, health promoting effect sensory acceptability of herbal Cookies. herbal cookies are shelf life is the 4 months. Herbal ingredient used are produce nutritionally improved Cookies with acceptable sensory Characteristics.
